The food industry is inextricably linked with global problems of humanity, starting from the impact of food quality on the health of the population and the so-called junk food and ending with the use of pesticides and chemical preservatives on plants and animals, leading to mutation and destruction of entire species of "harmful" plants and insects. This article focuses on changing the consciousness of mankind in the historical perspective, in relation to the introduction of scientific achievements of the chemical industry in the food industry. The text demonstrates whether the interventions of scientific and technological progress were safe and whether they have had a negative impact on the quality of food.
